Ingredients

Wheat flour - 250 grams
Gram Flour - 1 cup
Green Maithi - 1/2 Puli
Green chili - 2 pieces - finely chopped
Coriander leaves - 1/2 cup finely chopped
Red chili powder - around 1 - tsp
salt to taste
Chaat Masala - 1/2 tsp or not, then 1-2 tsp of lemon juice
Garam Masala - 1/4 tsp
Asafoetida - 1/4 tsp 
Whole Cumin or Cumin Powder - 1 - tsp
Ghee or oil - 1/4 cup - for mixing in flour
Ghee or oil and butter - for frying the paratha

First of all take out all the leaves of the Methi pulp one by one, remove the duntal part.

Wash the fenugreek leaves with clean water and chop them finely with a knife.

Now sieve the wheat flour in a bowl with the sieve, similarly filter the gram flour with the sieve, mix the sieved wheat flour and gram flour together.

Now add 1/4 cup ghee or oil to the mixed gram flour and flour,After this, add red chili powder,Asafoetida, garam masala, chat masala, salt, cumin and mix well.

after that add chopped fenugreek leaves, green coriander, green chilli and mix well.

Now knead the flour by adding a little water to the fenugreek flour, knead it for at least 4-5 minutes.

Maithi flour should be kneaded to medium size, neither too soft nor too hard, be medium so that methi paratha will be good.

Wet and squeeze the cotton cloth, now put cotton cloth on the fenugreek flour and keep it for 2-3 minutes.

Now knead the fenugreek flour and make a medium sized dough.

Now take a rolling pin, apply a little flour to both the sides and make maithi paratha in round shape like a Chapati.

Heat the tava by turning on the gas burner, when the tava is moderately hot, put the prepared methi paratha on the pan and compress both the sites thoroughly.

When both the sites of Methi Paratha are roasted then fry them lightly by adding ghee or butter.

Similarly prepare Methi Paratha from other Methi flour.

Your Methi Paratha is ready, serve with hot spiced curd or raita.

Serve Methi Paratha with tomato sauce, green chutney or pickle.
