To make raita.we will need yogurt, we can store yogurt at home (Javan) or else we can use curd with dairy products (Javan) at home.

Curd (Javan) recipe

To establish curd (Javan) use Amul / Saras Gold milk or buffalo milk as much as you use condensed milk.

Heat as much curd (Javan) as you want, in steel tapeli until the milk boils.

When the milk comes to a boil, keep the milk in the fan to cool down.

When the milk gets cold, put a finger in the milk and check (10% hot out of 100%) if there is a slight burning sensation then the milk is ready to set the curd.

(You can also add yogurt without ravayi (javan), for this you do not have to stir after adding buttermilk to the milk, cover it with a lid and keep it in a less warm place.

Now cover the milk tap in a place where the temperature is warm, such as the kitchen, do not keep it in a cool place or else the curd (javan) will not be frozen.

Make yogurt javan at night and check it in the morning.

Veg Raita Ingredients

  • Curd - 1 bowl
  • Cucumber - 1/4 part - peeled - finely Chopped
  • Tomato - 1/2 part - seedless finely Chopped
  • Onion - 1/2 portion - finely chopped
  • Cumin seeds - 1/2 tbsp - finely ground
  • Salt - to taste
  • Black salt - a pinch or as per taste
  • Water - 1/2 cup

Cumin grinding method

Take raw cumin according to your requirement, heat the iron griddle moderately.

Put the cumin seeds on the griddle and fry them till they turn medium brown.

Now grind the cumin seeds in a mixer jar and fill it in a vessel, use it with every required recipe or meal.

Method of preparation of Veg Raita

First wash the finely chopped cucumber, tomato and onion.

After that, if curd is thickened by taking curd in a jug,then pour half a cup of water and whisk it with rviya until a little rabdi is stirred in the curd.

Now take out the whipped yogurt in a bowl and add finely chopped vegetables (cucumber, tomato, onion) to the curd.

Now add powdered cumin, salt and black salt and mix.

Now check the taste of veg raita, if salt or rock salt is less then add more

Your plain veg raita is ready. If you want to spicy veg raita, you can spicy veg raita using red chili powder or ground green chilli.

Veg raita is ready to enjoy the spicy taste with lunch or dinner meal.
