Method of boiling rice

Heat the water in a steel patila vessel or aluminum patila vessel.According to at least one or two plates.

Now put 1 tbsp of salt and 2-3 tbsp of oil in that water and heat it till it boils.

When the water comes to a boil,add 1-2 bowls of rice and cook for 10 to 15 minutes.

After cooking the rice, sieve it in a steel jar,add normal water to the rice and cool it.Now keep the rice mixed with oil.

Boiled rice is ready to make Schezwan Rice.

Veg Ingredients for making Schezwan Rice

  • Cabbage - 1/2 bowl - finely chopped
  • Capsicum - 1/4 bowl - finely chopped
  • Onions - 1/4 bowl - finely chopped
  • Green Peas - 1/4 Bowl - Desi or Readyment
  • Tomatoes - 1/4 bowl - finely chopped
  • Garlic - 7-8 buds finely chopped or garlic ginger paste 1-2 tbsp
  • Green chili - 1-2 piss - finely chopped
  • Coriander leaves - as required

Sauce Ingredients for Schezwan Rice

  • Schezwan Chuttany - 1 tbsp or as required
  • Red Chilli Sauce - 3 tbsp
  • Green Chilli Sauce - 2 tbsp
  • White Vennigar - 1 tbsp
  • Soya Sauce - ½ tbsp
  • White pepper - 1/4 tbsp
  • Mono sodium glutamate - 1 tsp
  • Salt - to taste
  • Oil - 1/4 tbsp 

Method of preparation of Schezwan Rice

First wash all the chopped veg vegetables, squeeze water or sieve it in a jar.

Take Chinese frypan or take a non-stick Embroidery and heat it a little by adding cooking oil.

Now add chopped garlic buds and fry till it becomes less brown (or if you have ginger garlic paste,add chopped vegetables first and then fry by adding ginger garlic paste.)

Now add chopped cabbage capsicum green peas and green chillies and fry for 1 minute on medium flame but keep stirring with a spoon so that the vegetables do not burn.Immediately after adding chopped tomatoes and fry for a few seconds.

Then add Schezwan chuttany and fry for 30 to 40 seconds.After that add boiled rice and mix well.

Immediately after this, add white Vennigar,Soya sauce,Salt,white pepper and mono sodium glutamate and cook for 1-2 minutes.

After this,add red chilli sauce and green chilli sauce and cook till the steam starts coming out of the rice.

Now take out in a plate and garnish with green coriander and serve hot with tomato sauce or without Tomato Sauce.
